This is the easiest cake I have made so far and it can be made with the home available ingredients during this lockdown period when supplies are limited.
- 1 packet Oreo biscuits
- 1/4th cup milk
- 1/4th teaspoon Eno
- finely chopped dry fruits for garnishing(walnuts, pitachio, almonds)
- 1 spoon sugar
- 2 spoon fresh cream(chilled)
Let's start:
- Remove the cream from the biscuits and keep it aside.
- Break the biscuits into pieces and grind into a coarse powder.
- Take out the grounded powder and gradually add milk to make the batter.
- Add half of the finely chopped dry fruits to the batter.
- finally add Eno and mix gently(don't over mix)
- Grease a small mould/pan with ghee or oil and pour the batter. Tap the mould to remove the air bubbles.
- Place the mould in a preheated Kadhai(heated for 10 minutes with some salt at the base and a stand/inverted plate in it)
- Bake on slow flame for 20 min. Check with a prick of toothpick at the centre of the cake, if it comes out clean the cake is ready.
- Remove the cake from the mould when it is completely cool and horizontally divide it into two pieces.
- Add sugar syrup over both the cake pieces with the help of a brush or spoon to make it soft and gooey.
For dressing:
- Mix the fresh cream with the cream removed from the biscuits to prepare a flowing type cream
- Spread half of the cream over a piece of cake and put another piece over it.
- Pour the remaining cream on the cake and garnish half of the cake with the dry fruits and put a half cut Oreo biscuit on the other half side (As shown in the image).
- Keep the cake in the fridge for 15 min and then enjoy it with your family.
